About the Recipe
Treat yourself to these delicious oatmeal chocolate chip cookies! I found a classic oatmeal cookie recipe a while back and modified it to make it dairy free, gluten free and refined sugar free, and it has now become one of my go-tos!

Ingredients
1 ½ cups gluten free oats, slightly pulverized
1 cup almond flour
1/2 tsp baking powder
1 tsp cinnamon
pinch Himalayan salt
1/2 cup dark chocolate chips
1/2 cup coconut oil melted and cooled
1 cup coconut sugar, packed
1 flax egg (I tbsp flax meal + 2 tbsp water)
1 tsp pure vanilla extract
Preparation
To make the flax egg, mix together the flax meal and water and let it sit for about 5-10 minutes.
In a large mixing bowl, cream the coconut oil and coconut sugar together with a hand mixer. Add the flax egg and vanilla, and continue until fluffy. Slowly add the dry ingredients, mixing on low. Lastly, fold in the chocolate chips.
Using an ice cream scooper to scoop, roll cookie dough in a ball and then slightly flatten using the palm of your hand. Place cookies on a cookie sheet and bake at 350 for 10-12 minutes.
